A few things yesterday. Some sort of invention with vodka, st elder, maraschino liqueur, green chartreuse and campari. Sometimes I just grab ingredients and follow my heart and it works? Which is exactly what happened with the soup! Parsnip, leek and garlic soup with stock and cream. Started grabbing the spices that pair well with parsnip since that was my star. Started with nutmeg and ended up with a slew of mint, fennel, vanilla, cardamom and clove. It was very flavorful, definitely needed a crunchy something on the side. Topped it with water radish micros and a side of crusty bread, buttered, salted, and garnished with sliced radishes.
Last drink is the one and only Singapore Sling. Was super excited to make this legit as I have benedictine now. It's a combo of gin, cointreau, pineapple juice, benedictine and cherry brandy. Had to make a couple tweaks due to being out of a some things but I don't think it hurt it. And the glass makes up for everything right? Subbed tripple sec and grand marnier for cointreau and Luxardo and Hennessy for cherry brandy. It's a delightful tiki kinda beverage.

Why not have a Singapore Sling? A delicious cocktail that’s fruity, citrusy and slightly bitter. What’s not to like? Again- from @smugglerscovesf and photo cred goes to @viva.la.lida .
2 oz seltzer
3/4 oz fresh lemon juice
1/4 oz Demerara Syrup
1/2 oz Heering Cherry liqueur
1/4 oz Benedictine
1 1/2 oz Gin
1 dash Angostura Bitters
1 dash Orange Bitters
All ingredients except seltzer shaken with cubed ice. Ice added to glass, seltzer added and contents of cocktail shaker gently strained on top. Garnished with a lemon wedge and colorful straw.

The SG noods you’d come to learn of living abroad, baffled w questions of ‘who, what, when, where, what?!’
Succulent slab of iberico pork patiently grilled over a small-scale charcoal grill till charred on all corners whilst still juicy & fibrous on the inside. Nutty-spicy from its peanut sauce & sweet-tangy w a spice from its pineapple salsa. An epitome for ‘omne trium perfectum.’
A lady’s ideal laksa - nood-less w a snap(per)! Smeared w a creamy concentrated laksa spice topped w a slab of red snapper & a prawn dumpling encased in glossy laksa leaf cucumber jelly.
🦀~ National Dish;
Cedric, the crab, was full of crab - I mean, no charade, only straight up blue swimmers & chestnuts carried on his back. He had fiery peppercorn eyes yet deep down, he was a sweeeet-ass tomato sambal kinda lad.
Dubbed the carb-less Char Kway Teow without missing the flavours of nostalgia.
Possibly the first class ticket of a new CKT era, made w chewy bouncey cuttlefish noodle strips stir-fried w egg, lard & a solid presence of wok hey.
Turning the milky fish soup into sips & nibbles. A warm cup of cod broth made ‘milky’ entirely from its rich collagen alternated w crunchy bites of shrimp cracker topped w caviar. Sip till the very end for a lil padi spice oomph~

In a sea of Candlenut milk, lives an island of traditional Teochew flavours made of bamboo shoots, shiitake & Sakura ebi, covered by delicate slices of hokkaido scallop carpaccio in place of the usual tapioca skin. Topped w Totoro’s fuki to shelter from the truffle rain.

Happy Friday and thank you so much for over 2K! Let’s start our weekend strong with a classic and refreshing cocktail, the Singapore Sling. Anytime someone comes to my house and asks for a refreshing sip, this is always one of my go-tos. Takes a few minutes to gather all the ingredients but it’s well worth it.

Without a doubt, one of the most famous cocktails in cocktail history. Personally, it is magical to mix 8 ingredients and get such a delicious result. .
Cherry Brandy 10ml
DOM Benedictine 5ml
Pineapple juice 80ml
Lime juice 10ml
Angostura Bitters 1 dash
Grenadine 1 dash
Add all ingredients into shaker, shake with ice and strain into a highball glass(i prefer tiki)filled with ice. Garnish with pineapple wedge and cherry( i prefer a🍌🐬).
