~ SLOW COOKED MEALS ~
You probably all know how much I love my slow cooker, but I thought I’d reiterate the usefulness of this fabulous kitchen appliance.
Today, I made this amazing Middle Eastern Lamb Pilaf in the slow cooker, a delicious, fragrant, flavoursome and nourishing meal. The best part about it was that the hands on time was literally:
⏰ 10 minutes this morning to rub the spice on and brown the meat.
⏰ 10 minutes at lunchtime to chop and add some veggies.
⏰ 5 minutes to add some rice, spinach and chickpeas.
⏰ 2 minutes to serve.
AMAZING for a busy day! If you weren’t around during the day, you could absolutely add the veggies at the start of the day, leave for 8 hours and come back knowing that dinner will be ready in 30 minutes.
If you’re thinking about buying a slow cooker, I could not recommend one more. Such a time saver!

So... in the end the lamb cooked slowly under foil for a total of 4 hours and then I removed the foil and cooked it for another 20 mins just to crisp up the potatoes. .
Melt in the mouth tender meat, gently releasing it’s fat and flavour into the stock softened vegetables and potatoes. .
Full of flavour and himself and I demolished the lot! In fact he said he was eating it slowly because he didn’t want it to end. 😊
So if you want a Lazy Sunday dish, this is it! Although we weren’t lazy whilst it was cooking - we emptied boxes of books and cookery books and filled many shelves. Then hung some pictures. Yes still post house move! .
And oh my .... I have SO many cook books. #hoarder .
Braised lamb shanks with apple and caper sauce....this was perfect today for lunch following the Remembrance Sunday Service. I was able to make this the day before and then just before leaving this morning I popped it into the bottom oven of the Aga.
This recipe is from Mary Berry’s Family Sunday Lunches. I served it with baked potatoes, greens and sprouting broccoli.
Ingredients (serves 6):
6 small lamb shanks
3 large onions, roughly chopped
6 large sticks celery, sliced
300ml apple juice
150ml chicken stock
2-3tbsp double cream
3tbsp capers, drained
Heat a large flameproof casserole over a high heat, add the shanks and brown on all sides. Lift on to a plate.
Add the butter to the pan and then the onions and celery and fry for 5 minutes over a high heat until soft.
Measure the flour into a bowl, stir in half the apple juice and mix to a smooth paste. Add the remaining juice and stock to the pan and bring to the boil. Pour a little of this liquid on to the blended flour and juice. Stir well and add to the pan. Stir until thickened.
Return the lamb to the pan and season. Bring to the boil, cover with a lid and simmer for 3 hours.
Stir in the cream and capers and serve piping hot.
This freezes well.

For lunch today, I had the slow cooked lamb with mint, eggplant, tatziki, guacamole, rice, black beans, feta, sweet plantain and baby arepa.
The lamb was tender and the guacamole had lots of flavour. This dish was delicious!

Slow cooker leg of lamb. Wednesday’s are notoriously tricky in my house. Different children at different after school activities which clash & mean I spend from 3.45-6.30 in my car. People need feeding something before, after and in between. Let’s add to this the further complication that I am on the cusp of attending my second birth in 5 days as the next client has begun an induction. The solution; my old friend the slow cooker. It needed a good dusting down as I am usually of the view why take 8hrs to cook something that can be done in 1.5? But today it is coming into its own. Searing lamb at 10am is a little odd. But the smugness that all I have to do now is cook some greens and serve this up in 8hrs time is massively lowering my stress levels. 🍽Recipe: chop potatoes and in this case parsnips too and put in bottom of slow cooker along with a couple of sliced onions, some cloves of garlic, sprigs of rosemary and a glass of red wine. Rub oil & seasoning into lamb.

Slow cooked lamb neck chops from @ethicalfarmers with potatoes and carrots in a tomato sauce. The meat was so tender it just fell off the bones 😋. Took less than 10 mins to put together and the oven did all the work!! Easy! No excuses for not having healthy nourishing food to eat.
I got the approval from Kai who said it was ‘super good’ 👍😋😋
Lamb Neck // A cheaper, lesser used cut of meat, lamb neck could be described as boney or awkward and has parts that really remind you it was once an animal. Or it could be described as meaty, tender and flavourful. A few people have told me that it’s most common use is to make soup but we have frequently cooked it in a low oven and then shredded the meat from the bones. These necks are destined for a tangine to be served for a private dinner party tomorrow.
Slow roasted lamb shoulder with asparagus, broccoli and roast potatoes.
I popped sprouts, carrots, parsnips, garlic and onion in a casserole pot, seared the marinaded meat and popped it on top of the veggies, surrounding it with water. The pot went in a 160 celcius preheated oven for 2.5 hours.
For the gravy I seived the the lamb/veg juice into a saucepan, added hot water, mustard and mango chutney, reduced it on the hob and thickened it with corn flour and a cold water mix.

Slow cooked lamb from @ethicalfarmers with some potatoes in a tomato sauce 😋😋😋 Lunch anyone??? I love slow cooking. It’s the easiest thing to put together when you don’t have much time and the oven does the work. Healthy, nutritious, home cooked food. No excuses for not eating well 👍👍

I love this recipe so much - even though it takes 6 hours to cook, the oven does all the work. And the result is a deliciously soft, falling off the bone lamb, flavoured with garlic, rosemary and balsamic vinegar.

🔥🔥Imagine this slow cooked over fire… 🙌🏻 But for those of us without a backyard camp oven, we can be totally boring and make this in the kitchen!
Ultra Tender Lamb Shawarma
2 kg/4lb bone in lamb shoulder or 1.7 kg butterflied lamb leg
3 garlic cloves, minced
1 tbsp EACH coriander, cumin, cardamon
1 tsp ground cayenne pepper (or to taste)
2 tsp smoked paprika
1 salt + ½ Black pepper
¼ cup each lemon juice + extra virgin olive oil (enough to make paste)
1. Mix Marinade in a bowl. Slather all over lamb, putting most on top. Place in baking dish, pour 2 cups of water around the lamb. Cover with foil, roast 3 hours at 180C/350F (standard) or 160C/320F (fan forced / convection), basting 3 times, until tender (pry with fork to check). Remove foil, roast 30 minutes until nice crust forms.
2. Pull meat off bone in large chunks. Either slice or shred, then pour over the pan juices. Option to BBQ for an even better crust. Great for making ahead as shoulder reheats really well and stays super juicy. Sliced onion, whole bulb of garlic, a few celery stalks, fresh thyme & 2 cups of beef stock at the bottom of cooker. Rubbed the lamb with some evoo, salt & pepper. Cooked on high setting in slow-cooker for 8 hours. I do usually seal the piece of meat prior to slow-cooking but this time I was a bit lazy & really didn’t want to make a mess of my stove top haha 😆 Instead, once it was ready I popped it in a really hot oven (uncovered) to seal & brown it. It was beautifully falling apart 👌🏼Liquid was strained & reserved to make gravy. Served with maple-roasted veg.
