In my online group this week we decided to take a peek in our spice cupboard and see what was lurking in the back……. And so the fun began 😳
Spices popping up from as far back as 2006 !!! It became our challenge for the rest of this week to clear the cupboard and pull our all our ‘out of date’ spices & re-stock re-stock with a batch of ‘GO TO’ spices for the remaining 5 weeks ahead.
Here are some of the most frequently used spices ….. • Black Peppercorns • Cayenne Pepper • Chlli Powder • Tumeric • Cinnamon • Cloves •Cumin • Curry Powder • Paprika • Ground Ginger • Garlic • Corriander • Dried Oregano • Dried Rosemary • Dried Thyme • Himalayan Salt

Chilli Salsa Black Beans, Rice, and Salad (Serves 4)
Done with leftover veggies and so yum. The lemon flavour is amazing!
1/4 butternut pumpkin, cut into bite size pieces
1/2 capsicum, cut into bite size pieces
1/2 brown onion, cut into bite size pieces
1/2 sweet potato, cut into bite size pieces
A few dashes of pepper
A few dashes of onion powder
A few dashes of garlic powder
A few dashes of cayenne pepper
A few dashes of cumin
Juice of a lemon wedge
Juice of 2 lemon wedges
1 onion, diced
1 red chilli, sliced
150 grams grape tomato
4 cloves garlic, minced
3/4 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon paprika
1/2 broccoli, cut into florets
1/2 zucchini, sliced
2 spring onion leaves, chopped
1 cup vegetable broth
400 grams cooked black beans, washed and drained
Mix A) and transfer to oven for 30 minutes @ 200 C.
For B), heat lemon juice and cook onion, garlic, chilli, and tomato until tomato is soft. Add spices and mix. Add vegetables and cook until the broccoli turns dark green. Add vegetable broth and beans and cook for 5 minutes. Served with basmati rice, four-leaf salad, and sliced avocado. Enjoy 😊.
