I hereby present to you the infamous lutefisk, the traditional Norwegian way of serving cod around Christmas. What you do is you take an old dried stock fish and soak it in lye for a couple of days. That’s right; lye. The longer you leave it there the more jelly-like and almost transparent it becomes. You then boil it and serve it with diced bacon, green pea purée and potatoes, wash it all down with aquavit and beer, and hey-presto, you’re acting like a true Norwegian. Sounds disgusting, right? I’m not particularly crazy about lumpy Egusi soup because the one wey lump and the one wey no lump na mouth e go enter 😆. However I HATE trying something over and over again and not getting it. That’s why I made it a POINT OF DUTY to find a fool proof method to make lumpy Egusi.
I have tried so many methods, frying the Egusi; mixing with onion; dropping thick paste into the soup. I even saw a recipe that called for eggs 🍳 one time but I couldn’t bring myself to try!
All these methods failed me because as soon as you stir the soup, issallover!😩 So I though about it and decided my best chance of getting long lasting lumps was to “secure the lumps” before they enter the pot. Light bulb💡moment “Microwave!” Now, you don’t need to use a Microwave if you don’t like the idea or if Nepa is doing you strong thing. You can achieve the same result by firming up the Egusi paste in a pot over low-medium heat . And no matter how much you stir your soup, it will not scatter!
I know someone will still say “It’s because you didn’t use Jerusalem Onion” or “The paste was not thick like slay mama thighs”. 🙄 🤣
Trust me I have tried many times over serval years and to be fair sometimes it worked especially with onions but I didn’t want sometimes, I wanted ALL THE TIME.
If you’re like me and you’d like to stir your pot of lumpy Egusi to a stupor this method is definitely for you! It will even withstand preheating so feel free to make a large batch and store in the freezer whenever you take it out to warm your lumps will remain intact!

This recipe is so delicious and highly nutritious and is believed to boost fertility and have therapeutic properties for new mums. Utazi is very bitter like bitter leaf so use sparingly. Its very popular for Nkwobi recipes, but is also delicious in soups. When making yours please reduce the quantity of the Utazi significantly or wash and squeeze out the juices a bit.⠀
This particular pot of soup was for a new mum. It is believed that Utazi is very good if you’re a new mother as it helps replenish the blood because its rich in iron. This soup was quite bitter, but all the obstacles and orishirishi made it easy for her to eat. She was already used to it to be fair because she ate it a lot while pregnant. I won’t lie I squeezed my own face when eating it 😆⠀
The clip at the end is what the soup would look like without all the extra Utazi. I ended up diluting my own portion with meat stock, crayfish and Achi. It still maintained the lovely bitter taste but it wasn’t too overpowering.⠀
My nursing mother days are long over, I just wanted to enjoy the soup 😁⠀
I suspect my brother is a nursing mother 🤔, he ate the soup without squeezing his face! 🤣⠀
