I just came back from Mexico and had some gorditas and was craving them again. Some Mexican dishes are often fried or contain a lot of oil especially when it is served at restaurants but these are very macro friendly and delicious! You can add beans, cheese, steak, chicken or anything of your liking!
🌶INGREDIENTS (Makes 2 gorditas) 50g of Maseca Flour (found in Mexican aisle)
5oz of #delrealfoods barbacoa (found @ Costco) 20g red onion Cilantro
Add water until you get a soft and moist dough consistency. Cut the dough in half and roll each one into a ball. Grab parchment paper or foil and fold it in half. Put the dough in between the foil and place a place on top to smash the dough into a round tortilla about 1/4 inch thick. Place the tortilla on a skillet four about 3-4 minutes on each side. Cut the tortilla in half and fill it.

This picture doesn’t do it justice but yum is all I have to say about last night’s dinner. Lentil taco “meat”, roasted veggies, salsa, avocado and Trader Joe’s organic cabbage blend! Here’s how to make the vegan lentil taco “meat”. All items can be purchased at Trader Joe’s. Sauté one chopped onion and add in 3 minced garlic cloves a few minutes into cooking the onion. Add in all of the spice: garlic powder, onion powder, chili powder, red pepper flakes, cumin, and salt. Add in 1/2-1 cup of vegetable stock (water works as well) and one container of Trader Joe’s cooked lentils. Use a potato masher and mash everything up! Cook on medium heat for another 5 minutes! Enjoy! .
Happy national Bosses Day to this person right here. She has had an impact on my life since I was 18. Not only does she care about her staff during work, but she also cares about them personally. Fiki tells you how it is whether good or bad, and for that it has made me a stronger person. She pours her heart into camp and has brought such a positive impact on the program in the time she has been there! She works hard on the annual Mud Run to improve it every year, brought tree climbing to camp, and embraced the water near by giving campers and staff the opportunity to canoe and kayak. She cares about every single child/teen/ and staff who comes through the gates. I am thankful to not only be able to call her my favorite boss of all time, but also a great friend. She was there when I enlisted in the Army, one of the first people to know, and was there every step of they way.
