Baking muffins is usually an easy task, but these are a little more elaborate than usual. The dough is dark from molasses and clover honey and it is rested in the refrigerator overnight before baking. It uses frozen wild blueberries instead of fresh ones which have a beautiful color and flavor. Baked in jumbo size and topped with a buttery almond streusel for added texture, they are the best way to start a Friday 🤩

My better half goes to NYC for the day and I get a nice little surprise from @bouchon_bakery . I remember the first time that we had these. We planned a trip around dinner at the French Laundry and decided to swing by their Yountville, CA outpost for breakfast, before a day of wine tasting in Napa, followed by our dinner @_tfl_ later that night. I’ve made Mille Crêpe before but this is the first time I get the crêpes extra thin which gives the cake an amazing texture. This is filled with a silky orange diplomat cream (vanilla bean pastry cream with orange zest and folded in whipped cream) and topped with crispy brûléed sugar. Oh, and there’s Grand Mariner in the crêpe batter for an extra touch of orange. TKOs stands for Thomas Keller Oreos. The cookie is a chocolate shortbread and I used @kingarthurflour Black Cocoa powder so it has an intense chocolate flavor and not overly sweet. The filling is a white chocolate cream piped to match the edges of the scalloped cookies. Throwback to a rainy day in Yountville at #thefrenchlaundry with great friends. The meal changed what I know about restaurants and service. @beer_jonah - As you recommended, I got the supplements and did not order any Bud Light.

My first batch of puff pastry was used to make these palmiers. The dough is rolled in sugar during the last two turns. Unlike the traditional ones, these have a rectangular shape that bakes into a thin sweet flaky sheet. In this recipe, these sheets are used to sandwich homemade seedless raspberry jam and dusted with powder sugar, but really they can be eaten as is.
