Meet Chef Ikuei Arakane a.k.a. Kin San, OMI’s Consultant Chef. Kin San has appeared in many TV shows, most notably Japanese Iron Chef in 2017.
Kin San previously headed the kitchen at Taxi Dining Room (Restaurant of the Year), was the Teppanyaki chef trainer at Koko in Melbourne and the executive consultant chef at the award-winning The Glass House in Tasmania.

Udon with curry! Japanese likes mix culture. I think this type of curry is Japanese original. It’s not spicy, not like a Indian curry, not like a green curry. I like Japanese curry! Almost every Japanese likes this type of curry I guess.

- Udon & Vegetable Stir Fry-
This quick and easy recipe makes 2 main dish servings, or 4 servings as a side dish. This is a great base recipe, that is perfect for addition add-ins. Chicken, shrimp or pork are a nice addition for a meal. Extra vegetables, such as bell peppers, bean sprouts or chopped cabbage are nice in this recipe too.
1 Tbsp avocado oil or other neutral cooking oil
1/2 medium onion sliced
1 medium carrots shredded
1 c green onion sliced
1 c mushrooms, sliced
3 c baby bok choy (spinach will also work well)
14 oz udon
1-2 tsp Sambal Oelek (or Asian Chili Garlic Sauce/Sriracha)
1/4 c soy sauce
2 tsp rice wine vinegar
1 tsp sesame oil
1 Tbsp honey (or sweetener of your choice)
2 cloves garlic minced)
1 Tbsp fresh ginger minced
Additional diced green onion
Marukame Udon | Honolulu | Award winning Udon Noodle place
It was our last day in Honolulu and we decided to walk around Waikiki and find a nice dinner place. As we were walking we came across Marukame Udon which had a huge line of people waiting outside. It was a 1.5hr wait to get inside but it was SO WORTH IT. You first choose your type of Udon and then you choose your tempura sides. They have dozens of freshly fried Tempura and various Musubi Rice Balls to choose from. I ordered the spicy pork udon and shrimp tempura, and it was DELICIOUS! It had the right amount of spice, the udon noodles were yummy and the saltiness of the ground pork added a great flavor to the overall dish. Not only was it our first time trying udon but the Marukame experience in itself was a winner.
Trivia: Marukame Udon is the world's largest Japanese Udon Noodle chain, with over 1,000 locations worldwide. The USP of this tiny place is that you get to see the udon being freshly made to order in front of you,so you also get to enjoy watching
