After gaining a TON of weight with my first baby boy, I never thought I’d get fit and healthy again. I was at the most #unhealthy point in my life back then and my mind kept telling me that I’d never be able to lose the weight or feel good about myself again. After 4 weeks I feel little demotivated for the first time on my first #ketochallenge . I love the food and the way the #lifestyle make me feel. Clear mind with #nocravings !!! A few years ago I was on a mission to be the skinniest I'd ever been, to drop from a size 14 to however small I could make myself
And I did it in the worst way possible
Caffeine pills became my life, over 540mg each and every day
PLUS drinking 2-3 caramel macchiatos with an extra shot of espresso
Eating barely one meal a day
AND chain smoking cigarettes
Yeah I was the skinniest I'd ever been, wearing a size 0 and an xsmall top but I looked and felt like death
I was weak and sick all the time, so tired, barely able to function (hence all that coffee) -----------------------------------------------
I did it wrong and I've learned
I am able to do this thing called EAT and know that with the proper food I consume I get to fuel my body cells to function the way they need to so that I DO have energy
So that I DON'T get sick
And I'm learning to love my body and myself enough to fuel and work it right
Because in doing that, my brain is thanking me too
I'm not insecure like how I was, even being a size 0
I am confident and happy and energetic and I LOVE the skin I'm in
I've finally learned to appreciate who I am and know that the work I put into myself will never be taken for granted because my body thanks me everyday-happy chemicals flowing, body systems functioning, and this smile on my face!
Chinese food cravings for dinner. I got this from the Chef P’s Restaurant located along N Jackson Ave in San Jose, CA. I was with my mom at the time. We went there mainly to pick up the fried calamari in prep for tomorrow’s special luncheon after church for Pastor’s bday… Temptation kicked in and I had to get my dinner as well since we were already there lol. Anyway, let’s eat! I was watching Independence Day on the TV if you can tell.

shrimp 🦐 and mushroom vol-au vent
1. cut ~4 mushrooms, cook them in some olive oil with minced garlic
2. make béchamel: melt one tablespoon of butter in a pan, add a tablespoon of flour, and a small glass of milk🥛, keep whisking this mixture on low heat until it thickens, add salt 🧂, pepper, and nutmeg
4. add the mushrooms and the cooked shrimp 🦐 to the béchamel
5. pour the béchamel into the vol au vent pastries, top it up with some grated cheese 🧀 and put it in the oven until cheese is melted
6. add more of the béchamel mixture on top 😋😋
7. accompany with some roasted brussel sprouts (roast them in the oven with some olive oil, salt and pepper and add an olive oil vinaigrette with some balsamic vinegar and honey 🍯 at the end)
It’s sad to say some people like to sit in their misery. No matter what is said or done, it will never change someone’s mind unless they are willing to take the next step. Most peeps think of foods as being either “GOOD” or “BAD.”
✅ GOOD ✅: Apples 🍏, salad 🥗, avocados 🥑
❌ BAD ❌: Chocolate 🍫, cookies 🍪, cake 🍰
Few things in life are purely black & white. Our food choices are no exception!
Plus, there's no one-size-fits-all definition for the terms "good food" and "bad food"...
For example, folks following a vegan diet vs. a paleo diet are going to have different views on the healthiness of certain foods like meat 🍖, nuts 🥜, and whole grains 🍞.
Even despite both being considered "healthy" approaches in the mainstream.
What’s more, there's also the fact that some people have allergies & intolerance towards certain foods 🐮🙅…
For some, high-quality dairy can provide a ton of health benefits. The same wouldn’t be true for someone with a dairy allergy or intolerance, obviously.
And a cookie 🍪 (often thought of as being a “bad" food) may have fewer micronutrients per calorie than an apple 🍎…
But(t🍑) that doesn't at all make the cookie unhealthy!
It's totes okay to have a cookie every once in a while if you're eating plenty of "more nutritious" foods too 🍎❤️🍪
THE BOTTOM LINE:
There are no universally "good" or "bad" foods, so let's stop labeling them that way... mmkay?
Instead, let's start thinking about foods the RIGHT way 👇
Not “good” or “bad”… ❌
But as “more & less nutritious.” ✅
And one more thing...
Let’s focus less on what other people tell us to eat and, instead, educate ourselves 📚 and choose foods that makes us feel good physically & mentally on an individual basis 💪🙂
