What’s Good? @benandjerrysuk have arguably ruled the kingdom of ice cream for many years, and this once solely dairy devoted brand have started to produce some plant-based alternatives🌱. We have tried the ‘Peanut Butter & Cookies’ and ‘Coconutterly Caramel’D’ flavours, (a couple of the new offerings out on UK supermarket shelves) and we were seriously impressed🍦. Creamy, sweet and dangerously moreish, these tubs of tasty vegan goodness are JUST as delicious as the dairy options😋. Our ultimate favourite is the Peanut Butter & Cookies; it’s slightly salty, crunchy and silky with a thick, creamy base and chunks of cookie and gooey peanut butter, which sent our tastebuds into overdrive🍪. 💵£5.50
Made with almond milk, this creamy and tasty treat took three years to perfect. @benandjerrysuk wanted to create a vegan ice cream🍨they could be proud of, and something that could be devoured by dairy-free consumers who wanted all the taste, but none of the guilt of their original dairy packed products🐮. When I was 20, I had this grand plan for what I need to accomplish and do by the time I am 25. There are many things, I have done and many things, I never thought I would be doing or having. There are also things, I dreamed of, but don’t have yet.
And that is okay! I have realized that it is far more important to enjoy every moment and make decisions that make you happy and when they make you happy. Not because society pressures to do or to have some things by a certain age, but because it is exactly what I want, exactly what makes me love my life!

WHAT I ATE AT MY VEGAN BIRTHDAY PARTY🎉
Hey guys! I hope you all had a lovely long weekend! (I had no school yesterday bc of Columbus Day!). Over the weekend, I had my birthday party since I turn 18 on October 18th! It was sooo nice to spend time with friends and family! ~
At my birthday party, I had TONS of awesome vegan food so I thought I’d share to give you guys some inspo! My friends all LOVED the food and none of them are vegan!! If you ever want to throw a party and serve vegan food, my advice is to GO FOR IT bc your friends and family will be supportive!!
OUR DINNER: My friends and I made our own DIY Cava bowls bc that’s my fav restaurant! We had falafels, lentils, rice, veggies, pitas, and tonsss of @cava dips and dressings that they sell in stores! If you don’t know what Cava is, it’s basically a restaurant with build-your-own Mediterranean bowls!
In my bowl, I had tons of rice, lentils, falafel, cabbage, onion, cucumber, tomato, a pita, roasted squash, Cava lemon herb tahini dressing, and Cava regular & roasted red pepper hummus!! It’s was SOO YUMMY and the best bday dinner EVAA🤩
OUR DESSERT: we absolutely DEMOLISHED three pints of enlightened nondairy ice cream!! The @eatenlightened flavors we had were mint chocolate, candy bar, and cinnamon bun and they SLAPPED!!! I had never tried the brand before but was inspired to by @naturally.karlee and it DID NOT disappoint! Literally the texture and flavor was THE SAME as regular ice cream according to my friends! We also had a raspberry apple crumble that my Mom made, with the recipe from @forksoverknives !! It was SOO yummy!!
Overall, the food was PHENOMENAL and I’m gonna be eating leftovers alllll week long which I am not mad about at all😆
Launching in Tesco from the end of October, @oatly will be bringing a trio of tempting oat milk-based ice-cream flavours to UK freezers – Chocolate Fudge, Hazelnut Swirl and Salted Caramel. Priced at £4.50 per tub, the tubs contain 235, 220 and 246 calories per 100g respectively.

For the cake
Ingredients for a 22cm | 8,5" loaf
190g | 1 1/2 cups white spelt or all purpose flour
20g | 1/4 cup raw cacao powder
80g | 1/2 cup moscovado sugar or coconut sugar
80g | 1/2 cup light brown sugar
1 teaspoon baking soda
1/2 teaspoon sea salt
65g | 1/3 cup coconut oil, melted, room temp
80ml | 1/3 cup espresso, warm
1 teaspoon vanilla extract
1 teaspoon white vinegar
240ml | 1 cup water
140g | 1 cup cashews, soaked overnight
140g | 1/2 cup coconut cream from a can
30g | 1/4 cup raw cacao butter, gently melted, at room temp
3 tbsp rice syrup
2 tbsp raw cacao powder
1. Preheat the oven to 175C| 350 F degrees. Line a 22x 12 cm | 9 x 5 inch loaf pan with parchment paper.
2. In a medium bowl, mix together the cacao powder, flour, sugar, baking soda and salt together. Set aside.
3. In a separate bowl, mix together the coconut oil, espresso, vanilla, vinegar, and water until well combined.
4. Stir in the wet ingredients into the dry ingredients and stir until just combined.
5. Pour the batter into the baking pan and bake for 50 - 55 minutes, or until a toothpick inserted in the middle comes out clean.
6. Remove from the oven and let cool into pan for 5 minutes before transferring to a cooling rack to cool completely.
Place the cashews, coconut cream, rice syrup and cacao in a high speed blender and blend until smooth. Add the cacao butter gradually through the top of the blender while the motor is running. These should blend in completely and you should end up with a smooth cream.
Place in the refrigerator for at least 4 hours, stirring from time to time. You can keep it in the fridge overnight and give it a good stir before using.

Blend all the ingredients together in a high speed blender or food processor until you have the consistency that you desire! You can enjoy the nice cream either after you made it or you can freeze it for a few hours and you'll have NICE CREAM ICE CREAM! You can also add 1 Teespoon of vanilla extract and a few dark chocolate chunks to enhance the flavor! 🙌🌱
