You can’t get enough Vitamin B12 on a vegan diet right? WRONG! First of all why is B12 so important for you? It’s essential as it’s a nutrient that keeps the blood cells and blood nerves healthy & also makes DNA. B12 prevents you from a type of anaemia called megaloblastic anamia which makes people tired & lethargic. So how do vegans implement that into their diet? Well you can simply supplement them or you can incorporate things such as fortified cereals e.g. Wheatbix & bran flakes. B12 is also found in nutritional yeast & fortified milk such as @alpro. Hopefully this is a simple guidance on how to increase your Vitamin B12 levels. I think the theory of vegans not being able to get enough Vitamin B12 in their diet has well and truly been debunked 😜 also which ‘vegan theory’ should I debunk next? Let me know down below :)

So recently I was told by the doctors that I had a vitamin B12 deficiency! Now the symptoms of being B12 deficient can present themselves in different forms depending on the person but the most common signs are:
✨Weakness, tiredness, or lightheadedness.
✨Heart palpitations and shortness of breath.
✨Nerve problems like numbness or tingling, muscle weakness, and problems walking.
So I was given the option to go straight to vitamin B12 injections but I decided to try and use supplements for a month to see if it made a difference! I have a blood test next week to see if it’s changed by sometimes people have Pernicious anaemia which is when the immune system attacks the cells in your stomach which results in your body being unable to absorb vitamin B12.
So I will have to wait to see what the blood tests say because if it hasn’t worked I will have get the injections! But so far I have noticed I’m not as tired!

VEGAN BROWNIES |
Before going vegan, we loved brownies, and absolutely adored the stodgy and gooey consistency. So, how do you veganise them? You make sure you’ve got the very best ingredients to match them up to the product you know and love. Simple? Not quite, but this is our best shot:
- 4 tablespoons ground flax
- 1/2 cup water
- 1/2 cup vegan butter
- 1 1/2 cup brown sugar, lightly packed
- 1 tbsp pure vanilla extract
- 1 cup all purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 cup, chopped dark dessert chocolate
Cook for 30-40 minutes on a high heat - 350F/176C. Take them out beforehand if they’re drying up too soon. Nothing worse than a dry brownie! Enjoy #brownies#veganbrownies

PEANUT STEW |
This really simple meal is so punchy in flavour, satisfyingly filling and, of course, completely vegan 😎. Here's exactly what you'll need:
- 1 medium sweet potato
- 400g tofu
- Salt and pepper
- 6 cups of veggie broth
- 1 red onion
- 5 cloves of garlic
- 2 tsp fresh ginger
- 2 bunches of fresh kale
- 3 tbsp peanut butter
- 2 tbsp tomato purée
- 1 tbsp sriracha
- The tofu and sweet potato needs 30 minutes cooking, then the veggie broth needs a good 20 minutes before adding the peanut butter paste, tofu and sweet potatoes. We hope you enjoy this one as much as we did 😊.
