Introducing ROSA GER. She’s part of the RiverBluff yurt collective and each of these yurts are named after grandmothers in our family. We call them the “grannie gers!” This one is named after my grandmother Rosa Catherine who lived from 1911 to 2009. Born and raised in Austin, Texas she was fluent in French and a real intellectual. First ones at Blue Hole this morning. It’s still really hard to be at home without Jasper, so we’ve been going for walks and drives to get out. This morning, we got up early and drove to Wimberley for some swimming and tranquillity in the nature.

SWEET POTATOES 🍠.
Despite the name, sweet potatoes aren’t related to Irish potatoes at all and they’re not yams. They’re actually part of the vining morning glory family.
SWEET POTATO SLIPS
Most vegetables can be started from seeds. Sweet potatoes are an exception. To start growing sweet potatoes you should start with slips. A slip is essentially a rooted cutting.
Now that you have your slips, you can plant them outside and start growing sweet potatoes!
Sweet potatoes like loose, well drained soil. If your soil has a lot of clay, I recommend getting a big pot or using raised beds. Dig a little hole and plant your seedling so that the roots are covered in dirt and the leaves are above ground. Lightly add the soil around your slips since sweet potatoes tend to bruise easily. Place your slips at least a foot from each other. You’ll want to immediately water your sweet potato plants once they’re planted, and keep them well-watered for the next week or two while they get acclimated to their surroundings and develop stronger roots.
They’re a little slow to start as their roots develop, but soon you’ll have a vine. Let the vine touch the soil and it will start to get more roots every so many inches. The more roots you have, the more potatoes you can get!
Sweet potatoes take about 120 days (4 months) from planting your slips to maturity. You can lightly dig around and see the size of your potatoes growing. If you’d like them to grow a bit more, you can cover them back up. Once the leaves start to turn yellow, your potatoes should be ready to harvest.
When you dig up your potatoes, brush off any dirt that you can, but do not wash your potatoes or get them wet. Once you harvest your potatoes you’ll want to let them cure. Curing is what gives your potatoes their sweet flavor. It also allows a second skin to form over your potatoes where any bruises might be.
To cure sweet potatoes, let them sit outside in a warm, humid, shady area. Make sure your potatoes aren’t touching. Do this for about two weeks. After curing, your potatoes will be ready for eating or storing until you’re ready to eat them!
Extra jam? Make these simple jam tartlets in a muffin tin! Follow our link for our Pâte Brisée Crust recipe, a perfect base for any jam, sweet or savory (we love raspberry or tomato jam for this recipe, but any jam will work!). .
Pâte Brisée Crust Ingredients:
2-1/2 cups all-purpose flour (plus, extra for dusting)
1 tablespoon sugar
1-1/2 teaspoons Kosher salt
1 cup unsalted butter (2 sticks), well chilled
4-6 tablespoons ice water
Jam and Egg Wash Ingredients:
12 tablespoons jam (flavor of your choosing!)
2 egg yolks
2 tablespoons milk
1. Place the flour, sugar, and salt in the bowl of the food processor and pulse to evenly distribute.
2. Cut the butter into 1/2-inch cubes.
3. Prepare the ice water by filling a small bowl with ice cubes and adding water. Stir until the water is well-chilled.
4. Place the butter cubes in the food processor with the flour mixture. Pulse 4-5 times to cut the butter into the flour. The flour-butter mixture will be coarse with some pea-sized pieces of butter remaining.
5. Add 2 tablespoons of the ice water by sprinkling on top of the flour and butter mixture. Pulse 2-3 times. Continue adding ice water by the tablespoon pulsing after each addition until a rough dough is formed.
6. Remove the dough from the work bowl gathering it into a rough ball. Flatten the dough ball into a disk about a half-inch in thickness and wrap in plastic wrap. Chill for 30 minutes.
7. Roll out the dough into a sheet 1/8” thick. Cut the dough into 12 even squares and arrange the dough in the cups of a muffin pan. Add a tablespoon jam to every square and fold in the edges. Freeze for 30 minutes.
8. In a small dish, beat together the egg yolks and milk. Brush the tarts with the egg wash and bake at 400°F until golden, about 30 minutes.
